I would define this recipe as simple and elegant!!! This dish makes a complete meal and is perfect for breakfast. It is high in proteins, Vit. D and calcium and is good for children.
- eggs - 4 nos.
- milk or cream - 1/3 cup
- cheddar cheese or any other cheese of your choice - 1/4 cup grated
- mozzarella - 100 gms sliced or shredded
- spring onions (only green part) - 2 stalks. finely chopped
- green chillies - 2 nos. finely chopped
- garlic - 2 cloves minced
Preheat the oven to 175 degrees C. Grease one small baking dish and set aside. I used 7” x 4” glass dish.
Whisk eggs and milk together. To it add Cheddar cheese, green chilies, minced garlic and spring onions. Pour into prepared baking dish. Top it with mozzarella slices or shreds and bake for 30 to 35 mins.
You can add crushed Lays potato chips to the egg mixture.
I had some M- oven fried potato chips (GIVE THE LINK) from the previous night, which I used as an omelet base. I lined the bottom of the baking dish with them, overlapping. Pour the mixture of omelet over it and baked as directed in the recipe above.
Other seasoning like basil, oregano, paprika, minced onions can also be added.
